Instructions
Instructions
- In a small saucepan over medium heat, combine the reserved pineapple juice, soy sauce, rice vinegar, honey, garlic, and ginger. Cover and bring to a boil.
- Once boiling, remove the lid and cook for 1 minute, stirring constantly.
- In a small bowl, whisk the cornstarch with 1 tablespoon of water to make a slurry. Add the slurry to the boiling sauce and cook for 1 additional minute, until thickened. Remove from heat.
- In a large mixing bowl, combine the ground turkey, panko, garlic, ginger, black pepper, cilantro, and 3 tablespoons of teriyaki sauce. Mix until just combined. Shape into four ¾-inch patties. Refrigerate for 30 minutes.
- Set aside some of the remaining teriyaki sauce for serving. Reserve the rest for grilling.
- Preheat grill to medium-high and lightly oil grates. Grill pineapple rings and onion slices until caramelized and tender, about 3 minutes per side for pineapple and 4 minutes per side for onion.
- Grill the burger patties for 4 minutes, then flip and brush with teriyaki sauce. Cook another 4 minutes, flip again, brush the other side. Cook until internal temp reaches 160 to 165°F, about 10 minutes total.
- Remove burgers from grill, cover and let rest 5 minutes. If desired, grill the buns. Serve burgers on toasted buns topped with grilled pineapple, onion, and brushed with reserved sauce.
