
Easy Ranch Taco Bites Recipe
These bite-sized taco cups are quick, cheesy, and perfect for parties or family dinners!

- 1 Muffin Tin
- 1 Skillet Large
- 1 Pizza Cutter
Ingredients
Main Ingredients
- 12 Flour Tortillas Taco or Fajita Size
- 1 lb Ground Beef
- 10 oz Rotel 1 can
- ½ cup Ranch
- 3 tablespoon Homemade Taco Seasoning or 1 packet of preferred store brand
- ½ teaspoon Sea Salt
- ½ teaspoon Ground Black Pepper
- 1 teaspoon Minced Garlic
- ½ teaspoon Onion Powder
- 1 cup Shredded Cheese Cheddar, Mexican Blend or Pepperjack work great
- Salsa optional, for topping
- Sour Cream optional, for topping
- Guacamole optional, for topping
- Shredded Lettuce optional, for topping
- Diced Jalapeno optional, for topping
- Avocado optional, for topping
- Diced Tomato optional, for topping
- Lime Juice optional, for topping
- Fresh Cilantro optional, for topping
Instructions
Instructions
- Lay out your flour tortillas and cut them into squares using a pizza cutter.
- Spray a muffin tin with cooking spray and fold/pinch the tortilla squares into the tin to form cups.
- Spray the tortillas again to help them crisp. Bake at 400°F for 10 minutes until crisp.
- While baking, brown the ground beef in a skillet. Strain the grease and return to pan.
- Add Rotel, ranch, taco seasoning, salt, pepper, minced garlic and onion powder to beef and combine.
- Divide the filling evenly between the 12 tortilla cups.
- Top each cup with shredded cheese and bake an additional 2-5 minutes to melt cheese.
- Remove cups from muffin tin and serve warm with additional toppings of your choice.
Notes
If you want these to be extra cheesy, stir in cheese to the meat mixture before filling. Leftovers may be stored for up to 3 days in an airtight container. Reheat in oven or microwave. Use leftover tortilla scraps for homemade chips!
