
Dubai Chocolate Pistachio Cake Squares: Pressure Cooker Style

- 1 ½ cups All-purpose flour
- ¾ cup Unsweetened cocoa powder
- 1 teaspoon Baking powder
- ¼ teaspoon Salt
- 1 cup Granulated sugar
- 2 Eggs large
- ½ cup Greek yogurt plain
- ½ cup Vegetable oil
- 1 teaspoon Vanilla extract
- ½ cup Milk room temperature
- ¾ cup Shelled pistachios chopped

- Grease a 7-inch cake pan and line the bottom with parchment paper.
- In a large bowl, sift together flour, cocoa powder, baking powder and salt.
- In another bowl, whisk sugar and eggs until pale and fluffy.
- Add yogurt, oil, and vanilla extract to the egg mixture and mix well.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk. Stir until just combined.
- Fold in chopped pistachios gently.
- Pour the batter into the prepared cake pan and cover with foil.
- Place a trivet inside your pressure cooker with 1.5 cups of water. Lower the cake pan onto the trivet.
- Cook on High Pressure for 30 minutes. Allow natural pressure release for 10 minutes, then remove and cool completely.
Notes
Top with more chopped pistachios or a dusting of powdered sugar before serving.
