Grease a 7-inch cake pan and line the bottom with parchment paper.
In a large bowl, sift together flour, cocoa powder, baking powder and salt.
In another bowl, whisk sugar and eggs until pale and fluffy.
Add yogurt, oil, and vanilla extract to the egg mixture and mix well.
Gradually add the dry ingredients to the wet mixture, alternating with the milk. Stir until just combined.
Fold in chopped pistachios gently.
Pour the batter into the prepared cake pan and cover with foil.
Place a trivet inside your pressure cooker with 1.5 cups of water. Lower the cake pan onto the trivet.
Cook on High Pressure for 30 minutes. Allow natural pressure release for 10 minutes, then remove and cool completely.
Notes
Top with more chopped pistachios or a dusting of powdered sugar before serving.
