This hearty and cheesy Cowgirl Dip made in the pressure cooker is the ultimate crowd-pleasing appetizer for game day or any gathering.

- 1 lb ground beef
- 1 onion chopped
- 1 can black beans drained and rinsed
- 1 can corn drained
- 1 can rotel tomatoes with green chilies
- 1 package taco seasoning
- 8 oz cream cheese cubed
- 2 cups shredded cheddar cheese
- 2 tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon pepper

- Set the pressure cooker to sauté mode and add olive oil.
- Add chopped onion and sauté until translucent.
- Add ground beef and cook until browned. Drain excess grease if needed.
- Stir in taco seasoning, salt, and pepper. Mix well.
- Add black beans, corn, and rotel tomatoes. Mix everything together.
- Cancel sauté, close the lid, and cook on high pressure for 5 minutes. Quick release when done.
- Stir in cream cheese and shredded cheddar cheese until melted and combined.
- Serve hot with your favorite chips or bread.

Feel free to add jalapeños or hot sauce if you prefer your dip spicy!
