Ingredients

  • 1 lb ground beef
  • 1 onion chopped
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 can rotel tomatoes with green chilies
  • 1 package taco seasoning
  • 8 oz cream cheese cubed
  • 2 cups shredded cheddar cheese
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper

  • Set the pressure cooker to sauté mode and add olive oil.
  • Add chopped onion and sauté until translucent.
  • Add ground beef and cook until browned. Drain excess grease if needed.
  • Stir in taco seasoning, salt, and pepper. Mix well.
  • Add black beans, corn, and rotel tomatoes. Mix everything together.
  • Cancel sauté, close the lid, and cook on high pressure for 5 minutes. Quick release when done.
  • Stir in cream cheese and shredded cheddar cheese until melted and combined.
  • Serve hot with your favorite chips or bread.

Notes

Feel free to add jalapeños or hot sauce if you prefer your dip spicy!
