Instructions
Set the pressure cooker to sauté mode and add olive oil.
Add chopped onion and sauté until translucent.
Add ground beef and cook until browned. Drain excess grease if needed.
Stir in taco seasoning, salt, and pepper. Mix well.
Add black beans, corn, and rotel tomatoes. Mix everything together.
Cancel sauté, close the lid, and cook on high pressure for 5 minutes. Quick release when done.
Stir in cream cheese and shredded cheddar cheese until melted and combined.
Serve hot with your favorite chips or bread.
Notes
Feel free to add jalapeños or hot sauce if you prefer your dip spicy!
