This chicken taco casserole combines the bold flavors of taco night with comforting baked layers of tortillas, cheese, and seasoned chicken—all ready in under an hour for stress-free dinners.
In a large bowl, combine shredded chicken, taco seasoning, salsa, black beans, corn, and sour cream. Mix well.
Grease a 9x13 inch baking dish.
Layer half the tortilla strips on the bottom of the dish.
Spread half the chicken mixture over the tortillas evenly.
Sprinkle 1 cup of shredded cheddar cheese over top.
Repeat layers with remaining tortillas, chicken mixture, and cheese.
Cover with foil and bake for 20 minutes, then uncover and bake for an additional 10 minutes until cheese is melted and bubbly. Garnish with chopped green onions.
