  • 1 packet taco seasoning
  • 1 cup salsa any kind
  • 1 can (15 oz) black beans drained and rinsed
  • 1 cup frozen corn
  • 2 cups shredded cheddar cheese
  • 8 small corn tortillas cut into strips
  • ½ cup sour cream
  • ¼ cup chopped green onions for garnish

  • Preheat oven to 375°F.
  • In a large bowl, combine shredded chicken, taco seasoning, salsa, black beans, corn, and sour cream. Mix well.
  • Grease a 9x13 inch baking dish.
  • Layer half the tortilla strips on the bottom of the dish.
  • Spread half the chicken mixture over the tortillas evenly.
  • Sprinkle 1 cup of shredded cheddar cheese over top.
  • Repeat layers with remaining tortillas, chicken mixture, and cheese.
  • Cover with foil and bake for 20 minutes, then uncover and bake for an additional 10 minutes until cheese is melted and bubbly. Garnish with chopped green onions.

Notes

Use rotisserie chicken to save time. Swap in flour tortillas if you prefer a softer bite. Store leftovers in the fridge up to 4 days or freeze for easy make-ahead dinners.
