  • 4 large eggs separated, straight from fridge
  • 1 cup Greek strained yogurt whole milk, plain
  • ¾ cup sweetened condensed milk full fat

  • Preheat oven to 325°F (160°C). Line bottom and sides of the 6-inch pan with parchment paper for easy cake removal.
  • In a big bowl, whisk egg yolks, yogurt, and sweetened condensed milk until smooth and creamy.
  • In a separate bowl, beat egg whites with electric mixer on high until stiff glossy peaks form.
  • Fold one-third of egg whites into yolk mixture to lighten it up.
  • Fold in remaining egg whites in two parts gently, without overmixing.
  • Pour batter into prepared pan and tap lightly to remove air bubbles.
  • Place pan in larger baking dish and fill with hot water halfway up the sides for water bath.
  • Bake for 30 minutes or until toothpick inserted comes out clean.
  • Turn off oven, leave cake in oven with door ajar for 10 minutes before removing and cooling completely.

Notes

Make ahead a day early for best chill and texture. Serve cold or at room temperature. Dust with powdered sugar for a simple finish.
