Preheat oven to 325°F (160°C). Line bottom and sides of the 6-inch pan with parchment paper for easy cake removal.
In a big bowl, whisk egg yolks, yogurt, and sweetened condensed milk until smooth and creamy.
In a separate bowl, beat egg whites with electric mixer on high until stiff glossy peaks form.
Fold one-third of egg whites into yolk mixture to lighten it up.
Fold in remaining egg whites in two parts gently, without overmixing.
Pour batter into prepared pan and tap lightly to remove air bubbles.
Place pan in larger baking dish and fill with hot water halfway up the sides for water bath.
Bake for 30 minutes or until toothpick inserted comes out clean.
Turn off oven, leave cake in oven with door ajar for 10 minutes before removing and cooling completely.
Notes
Make ahead a day early for best chill and texture. Serve cold or at room temperature. Dust with powdered sugar for a simple finish.
