  • 2 teaspoons coconut oil
  • ¾ cup rice crisp cereal

  • Line your 8x8-inch baking pan with parchment paper and set it aside.
  • In a microwave-safe bowl, add 1 ½ cups chocolate chips and 2 teaspoons coconut oil.
  • Microwave in 30-second bursts, stirring in between to prevent burning.
  • Stir until the mixture is fully melted and smooth.
  • Fold in ¾ cup of rice crisp cereal. Mix until all is coated evenly.
  • Pour mixture into lined pan and spread evenly with spatula.
  • Refrigerate for 30 minutes until set. Then lift out and cut into bars.

Notes

Store the bars in an airtight container. They last about 1 week at room temp or up to 1 month in the freezer. Let sit a few minutes at room temperature before enjoying if chilled.
