  • 1 Shallot diced
  • 4 cloves Garlic minced
  • 1 tablespoon Fresh ginger grated
  • ¼ cup Fresh cilantro chopped, plus more for topping
  • cup Lime juice about 2 limes
  • 4 Chicken breasts or thighs, seasoned with salt and pepper
  • 2 tablespoon Avocado oil or coconut oil
  • 1.5 cups Coconut milk
  • ¼ cup Chicken broth
  • Salt and pepper to taste
  • Lime slices for topping (optional)

Instructions

  • Season your chicken breasts with salt and pepper on both sides.
  • Heat avocado oil in a large skillet over medium-high heat. Sear chicken 4-5 minutes per side until golden and nearly cooked through. Set aside.
  • Reduce heat to medium and add diced shallot. Cook 2 minutes until soft. Stir in garlic and ginger. Cook for 1 more minute.
  • Pour in coconut milk, chicken broth, and lime juice. Stir and bring to simmer.
  • Return chicken to skillet. Simmer 8-10 minutes until chicken is fully cooked and sauce thickens slightly.
  • Stir in chopped cilantro and taste the sauce. Adjust seasoning as needed.
  • Serve hot, topped with extra cilantro and lime slices if desired.

Notes

Serve with rice, cauli rice, vegetables, or noodles and spoon sauce over the top. Store leftovers in fridge up to 3 days or freeze for 2 months.
