Pop 2 tablespoons of butter into your saucepan or pressure cooker on medium heat and let it melt till it’s hot and bubbly.
Peel and mince 4 garlic cloves. Add them to the hot butter and sauté for 1–2 minutes until fragrant.
Stir in 2 tablespoons of tomato paste and cook another 2–3 minutes until slightly darkened.
Sprinkle in the Cajun seasoning and stir well to combine with other ingredients.
Pour in ¾ cup cream slowly while continuously stirring. Bring mixture to a gentle simmer.
Let the sauce simmer for 5–7 minutes, stirring occasionally, until thickened.
Taste and adjust if needed. Serve warm or store in fridge in airtight container.
Notes
Store in an airtight container in the fridge for up to a week. Reheat on low with a splash of cream to restore texture. Freezing is possible but may slightly change consistency.
