Ingredients
  

  • 1 cup shredded cabbage about 100g
  • 1 cup shredded carrots about 100g
  • 1 cup cooked chicken, shredded about 150g - can substitute with tofu for a vegetarian option
  • 4 pieces green onions, chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 8 pieces egg roll wrappers
  • as needed spray cooking spray for air fryer

Instructions
 

  • In a mixing bowl, combine the shredded cabbage, shredded carrots, cooked chicken, chopped green onions, soy sauce, garlic powder, and ginger powder. Mix until all ingredients are well combined.
  • Lay one egg roll wrapper on a flat surface, and place about 2-3 tablespoons of the filling in the center.
  • Fold the bottom of the wrapper over the filling, then fold in the sides. Roll up to form a tight cylinder. Seal with a bit of water if necessary. Repeat with the remaining wrappers and filling.
  • Preheat your air fryer to 380°F (190°C).
  • Lightly spray the air fryer basket with cooking spray. Arrange the egg rolls in the basket in a single layer, making sure they do not touch.
  • Spray the tops of the egg rolls with cooking spray as well.
  • Cook in the air fryer for about 10-12 minutes, flipping halfway through, until they are golden brown and crispy.
  • Once done, remove from the air fryer and let cool for a few minutes before serving.
  • Serve with soy sauce, sweet chili sauce, or your favorite dipping sauce.

You can customize the filling by adding other vegetables like bell peppers or mushrooms.
For even crispier egg rolls, increase the cooking time by a couple of minutes, but keep an eye on them to prevent burning.
