Ingredients
  

  • 2 lbs beef ribs
  • 3 medium carrots, chopped About 2 cups.
  • 2 medium apples, peeled and diced About 2 cups.
  • 1 onion, chopped
  • 4 cups beef broth
  • 2 cups water
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon thyme
  • 2 tablespoons olive oil
  • 1 bay leaf

Instructions
 

  • Heat the olive oil in a large pot or Dutch oven over medium heat.
  • Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
  • Season the beef ribs with salt, pepper, and thyme. Add the beef ribs to the pot and brown them on all sides, about 10 minutes.
  • Pour in the beef broth and water, and add the bay leaf. Bring to a boil, then reduce the heat to low.
  • Cover and let simmer for about 1 hour.
  • After an hour, add the chopped carrots and diced apples to the pot. Stir gently to combine.
  • Continue to simmer, covered, for another 1 hour until the beef is tender and the flavors meld together.
  • Discard the bay leaf before serving. Adjust seasoning if necessary.

Notes

For a richer flavor, you can roast the beef ribs before adding them to the pot.
This soup can be stored in the refrigerator for up to 3 days and can be frozen for longer storage.
Serve with crusty bread for a complete meal.
