- 2 lbs beef ribs
- 3 medium carrots, chopped About 2 cups.
- 2 medium apples, peeled and diced About 2 cups.
- 1 onion, chopped
- 4 cups beef broth
- 2 cups water
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon thyme
- 2 tablespoons olive oil
- 1 bay leaf
Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
Season the beef ribs with salt, pepper, and thyme. Add the beef ribs to the pot and brown them on all sides, about 10 minutes.
