  • In another bowl, whisk milk, beaten eggs, vanilla extract, and melted butter until combined.
  • Pour the wet mix into the dry ingredients and stir gently. Lumps are fine.
  • Fold in the cubed apples evenly into the batter.
  • Heat your pressure cooker until steam pressure builds. Watch the valve cues.
  • Spoon batter onto parchment or skillet inside the cooker to cook or crisp as desired.
  • Cook under pressure for several minutes until done.
  • Use a quick release when time’s up to avoid sogginess.
  • Dust with powdered sugar or drizzle glaze. Serve warm.

Notes

Use a firm apple so it doesn’t get mushy. Do not over-mix the batter. For extra crisp, finish with a quick sear.
