Whisk together flour, sugar, baking powder, cinnamon, and salt in a large bowl.
In a separate bowl, beat the eggs. Add milk, melted butter, and vanilla extract and whisk until smooth.
Combine wet and dry ingredients, stirring just until mixed. Do not overmix.
Fold in diced apples so they are evenly distributed.
Heat oil in skillet or deep fryer to 350°F.
Drop spoonfuls of batter into hot oil, flatten lightly if needed.
Fry each side for 2–3 minutes until golden and cooked through.
Remove fritters with a slotted spoon and drain on paper towels.
Dust with powdered sugar or drizzle glaze if desired.
