Preheat your oven to 350°F (175°C). Grease the baking dish with non-stick spray or butter.
In a small mixing bowl, combine the granulated sugar and ground cinnamon. Set aside.
Open the cans of biscuit dough and cut each biscuit into quarters. In a large mixing bowl, toss the biscuit pieces with half of the cinnamon-sugar mixture until evenly coated.
Add the chopped apples to the bowl and gently fold them in with the biscuit pieces.
In another small bowl, mix together the melted butter and brown sugar until well combined.
Layer half of the biscuit and apple mixture into the greased baking dish. Drizzle half of the butter and brown sugar mixture over the layer.
Add the remaining biscuit and apple mixture on top, then drizzle the rest of the butter and brown sugar mixture over the top.
Bake in the preheated oven for 30 minutes, or until the top is golden brown and the bread is cooked through.
Let the bread cool slightly in the dish for about 5 minutes before inverting onto a serving plate.
Serve warm, pulling apart the pieces and enjoying the gooey, sweet bread.
