  • 500 g extra lean ground beef
  • 5 cloves garlic peeled
  • 0.5 onion peeled and quartered
  • 0.5 cup parsley packed
  • 0.5 teaspoon black pepper ground
  • 1 teaspoon salt
  • 1 teaspoon seven spice or allspice as substitute
  • 2 tablespoons pomegranate molasses
  • 2 tablespoons olive oil for the meat
  • 2-3 tablespoons olive oil for the pitas
  • 4 round pitas smaller 4 inch

  • Preheat oven to 400°F (200°C).
  • Add garlic, onion, and parsley to a food processor and pulse until finely chopped.
  • Transfer mix to a bowl. Add ground beef, salt, pepper, seven spice, pomegranate molasses, and olive oil. Mix until well combined.
  • Slice pita bread into halves or quarters and gently open to form pockets.
  • Stuff each pita section with a few tablespoons of the beef mix and flatten the filling slightly.
  • Brush olive oil on both sides of each stuffed pita.
  • Arrange on baking sheet and bake for 10-12 minutes on each side, flipping halfway through until golden brown.
  • For extra crispness, broil for 1-2 minutes. Serve warm.

Notes

Serve with ketchup, yogurt, or tahini sauce. You can prep the filling a day ahead and refrigerate or freeze for later.
