Preheat oven to 400°F (200°C).
Add garlic, onion, and parsley to a food processor and pulse until finely chopped.
Transfer mix to a bowl. Add ground beef, salt, pepper, seven spice, pomegranate molasses, and olive oil. Mix until well combined.
Slice pita bread into halves or quarters and gently open to form pockets.
Stuff each pita section with a few tablespoons of the beef mix and flatten the filling slightly.
Brush olive oil on both sides of each stuffed pita.
Arrange on baking sheet and bake for 10-12 minutes on each side, flipping halfway through until golden brown.
For extra crispness, broil for 1-2 minutes. Serve warm.
Notes
Serve with ketchup, yogurt, or tahini sauce. You can prep the filling a day ahead and refrigerate or freeze for later.
