Ingredients
  

  • 1 pound ground beef (80/20)
  • 2 tablespoons vegetable oil
  • ½ cup onion, finely chopped Approximately 1 small onion.
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • ¾ cup red bell pepper, diced
  • 1 cup mushrooms, finely diced
  • ¼ cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon crushed red pepper flakes (optional)
  • 12 large lettuce leaves (butter or romaine)
  • ¼ cup chopped green onions (for garnish)
  • sesame seeds (for garnish)

Instructions
 

  • Heat the vegetable oil in a large skillet over medium heat.
  • Add the chopped onion to the skillet and sauté for about 2 minutes until soft.
  • Stir in the minced garlic and ginger; cook for another minute until fragrant.
  • Add the ground beef, breaking it up with a wooden spoon. Cook until it’s browned and no longer pink, about 5-7 minutes.
  • Stir in the diced bell pepper and mushrooms, cooking for an additional 3-4 minutes until they are tender.
  • In a small bowl, mix together the soy sauce, hoisin sauce, rice vinegar, sesame oil, and crushed red pepper flakes (if using); pour this sauce over the beef mixture. Stir well to combine and cook for another 1-2 minutes until heated through.
  • Remove the skillet from the heat.
  • To serve, spoon the beef mixture into the center of each lettuce leaf. Top with chopped green onions and sesame seeds, if desired.
  • Roll or fold the lettuce around the filling and enjoy!

Notes

You can add other vegetables, such as carrots or zucchini, to the filling for additional flavor and texture.
For a healthier option, use ground turkey or chicken instead of beef.
Serve with extra dipping sauce, such as soy sauce or a chili garlic sauce, on the side.
