Equipment

Ingredients
  

  • 4 pieces bone-in pork chops about 1 inch thick
  • 8 ounces bacon about 8 slices
  • 8 ounces mushrooms, sliced cremini or button mushrooms preferred
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • to taste none salt
  • to taste none black pepper
  • for garnish none fresh parsley, chopped

Instructions
 

  • Start by seasoning the pork chops with salt and black pepper on both sides.
  • In a large skillet, cook the bacon over medium heat until it's crispy. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain, leaving the bacon drippings in the skillet.
  • In the same skillet with the bacon drippings, add the pork chops. Sear them for about 5-6 minutes on each side until they are golden brown and cooked through (internal temperature should reach 145°F). Once done, remove the chops from the skillet and set them aside on a plate.
  • In the same skillet, add olive oil if needed, and then add the diced onion. Sauté for about 3 minutes until translucent.
  • Add the minced garlic and sliced mushrooms to the skillet. Cook for 5-7 minutes until the mushrooms are browned and tender.
  • Pour in the chicken broth, scraping the bottom of the pan to release any browned bits. Bring to a simmer and let it reduce slightly for about 3-5 minutes.
  • Return the pork chops to the skillet, along with the crispy bacon, and spoon some of the sauce over the chops. Let them cook together for an additional 2-3 minutes, allowing the flavors to meld.
  • Remove from heat and garnish with fresh parsley before serving.

Notes

You can serve these pork chops with mashed potatoes, rice, or a fresh green salad for a complete meal.
Feel free to adjust the amount of mushrooms or bacon to your personal taste.
If you prefer, boneless pork chops can be used, but be careful not to overcook them.
