Melt butter in a skillet over medium heat. Add jalapeno, onion, and garlic. Sauté until soft, about 5 minutes.
In a bowl, mix sautéed vegetables with crumbled tater tots and shredded mozzarella cheese.
Grease two ramekins. Press the tater tot mixture into the base of each.
Crack one egg onto each ramekin. Season with salt and black pepper.
Pour ½ cup broth into the bottom of the pressure cooker. Place trivet, then ramekins on top.
Seal lid with ring in place. Cook on high pressure for 5 minutes. Perform a quick release.
Let ramekins cool for a minute before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze without the egg topping. Reheat gently before serving.
