Ingredients
  

  • 8 ounces pasta (penne or fusilli)
  • 8 ounces feta cheese
  • 2 cups cherry tomatoes, halved
  • ½ cup extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional) Optional for added spice.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large baking dish, combine the cherry tomatoes, olive oil, minced garlic, dried oregano, red pepper flakes (if using), salt, and pepper. Mix well to coat the tomatoes evenly.
  • Place the block of feta cheese in the center of the mixture, ensuring it is surrounded by the tomatoes.
  • Bake in the preheated oven for about 30 minutes, or until the tomatoes are bursting and the feta is soft and slightly golden.
  • While the feta and tomatoes are baking, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  • Once the feta and tomatoes are out of the oven, remove the baking dish and use a fork to mash the feta and tomatoes together to create a creamy sauce.
  • Add the cooked pasta to the baking dish and toss everything together until the pasta is well coated with the sauce.
  • Taste and adjust seasoning with additional salt and pepper if needed.
  • Serve immediately, garnished with fresh basil leaves if desired.

Notes

Feel free to customize this dish with your favorite vegetables or proteins.
For an extra creamy texture, add a splash of pasta water before combining the pasta with the sauce.
This dish is excellent both warm and cold, making it a great option for leftovers.
