Ingredients
  

  • 4 thighs chicken (bone-in, skin-on, about 1.5 lbs total)
  • ¼ cup soy sauce
  • ¼ cup ketchup
  • ¼ cup brown sugar
  • ¼ cup pineapple juice
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional for heat)
  • 2 green onions sliced (for garnish)

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, combine the soy sauce, ketchup, brown sugar, pineapple juice, apple cider vinegar, ginger, garlic, sesame oil, black pepper, and cayenne pepper. Whisk thoroughly until well mixed.
  • Place the chicken thighs in a baking dish and pour half of the marinade over them. Make sure the chicken is well coated. Reserve the remaining marinade for later.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  • After 25 minutes, remove the foil and baste the chicken with the reserved marinade. Bake for an additional 15 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and is caramelized on top.
  • Remove the chicken from the oven and let it rest for 5 minutes before serving. Garnish with sliced green onions.

Notes

For extra flavor, marinate the chicken for several hours or overnight in the refrigerator.
This dish pairs well with steamed rice and grilled vegetables for a complete meal.
You can substitute chicken breasts if you prefer a leaner option; just adjust the baking time accordingly.
