Preheat your oven to 400°F (200°C).
In a mixing bowl, whisk together the Dijon mustard, honey, olive oil, lemon juice, garlic powder, dried thyme, salt, and pepper until well combined.
Place the salmon fillets skin-side down in the baking dish.
Brush the Dijon mixture generously over the top of each salmon fillet, covering them evenly.
If desired, cover the baking dish with aluminum foil for the first half of the cooking time.
Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork.
Remove from the oven, and if covered with foil, remove it for the last 2-3 minutes to allow the top to crisp up slightly.
Garnish with fresh dill or parsley before serving.
