Preheat your oven to 325°F (163°C).
In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until well combined.
Press the mixture firmly into the bottom of the springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
In a large mixing bowl, use an electric mixer to beat the softened cream cheese until smooth. Gradually add the sugar and mix until well blended.
Add the mashed bananas, eggs, vanilla extract, lemon juice, and banana extract (if using) to the cream cheese mixture. Beat until smooth and fully combined.
Pour the filling over the cooled crust in the springform pan and smooth the top with a rubber spatula.
Bake in the preheated oven for 50 minutes, or until the center is set and doesn’t jiggle. Turn off the oven and leave the cheesecake inside with the door slightly open for an additional 10 minutes.
Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight to let it set completely.
Before serving, top the cheesecake with sliced banana and whipped cream if desired.
