  • 1 ½ pounds Chicken breast skinless, boneless, butterflied and pounded thin
  • 1 Egg large
  • ¼ cup Water
  • 1 cup All-purpose flour
  • 1 teaspoon Garlic powder
  • 1 teaspoon Cayenne pepper
  • 1 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 cups Panko bread crumbs
  • 1 cup Avocado oil or other vegetable oil
  • ½ cup Mayonnaise
  • 2 tablespoons Sweet chili sauce
  • 1 tablespoon Hot pepper sauce like Tabasco
  • 1 teaspoon Rice wine vinegar
  • 1 package Hawaiian rolls 12 count
  • 24 Lettuce leaves rinsed and patted dry

  • Preheat your oven to 400°F (200°C).
  • Set up a breading station with seasoned flour, egg wash, and panko crumbs.
  • Dip chicken into flour, then egg wash, and coat with panko, pressing gently.
  • Place breaded chicken on baking sheet with parchment or wire rack.
  • Bake for 20–25 minutes until golden and cooked through.
  • Let chicken rest, then prepare sliders by assembling with buns, sauce, and lettuce.
