Ingredients
  

  • 2 cups cooked chicken, shredded
  • 1 cup BBQ sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • ¼ cup green onions, chopped optional
  • ¼ cup cilantro, chopped optional

Instructions
 

  • In a mixing bowl, combine the shredded chicken with the BBQ sauce, mixing until the chicken is well coated.
  • Heat the olive oil in a large skillet over medium heat.
  • Place one tortilla in the skillet and sprinkle about ½ cup of cheese evenly onto one half of the tortilla.
  • Spoon ½ cup of the BBQ chicken mixture on top of the cheese, and if desired, add some chopped green onions and cilantro.
  • Immediately top with another ½ cup of cheese before folding the tortilla in half to cover the filling.
  • Cook the quesadilla for about 3-4 minutes until the bottom is golden and crispy. Carefully flip it using a spatula and cook the other side for an additional 3-4 minutes until it is also golden and the cheese has melted.
  • Remove the quesadilla from the skillet and repeat the process with the remaining tortillas and filling.
  • Slice the quesadillas into wedges and serve hot with extra BBQ sauce for dipping, if desired.

Notes

Feel free to customize your quesadilla by adding vegetables like bell peppers or onions.
For a spicier kick, you can add jalapeños to the filling.
These quesadillas are great for meal prep and can be easily reheated.
