Equipment

  • 1 large baking tray
  • 1 oven or grill
  • 1 mixing bowl
  • 1 basting brush
  • 1 aluminum foil
  • 1 meat thermometer
  • 1 tongs

Ingredients

  • 4 pounds pork spare ribs
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon brown sugar
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper adjust for heat preference
  • 2 cups BBQ sauce store-bought or homemade

Instructions

  • Preheat your oven to 300°F (150°C). If using a grill, prepare it for indirect cooking.
  • Remove the membrane from the back of the ribs to allow for better flavor absorption. Use a paper towel for a better grip and pull it off gently.
  • In a mixing bowl, combine smoked paprika, garlic powder, onion powder, brown sugar, salt, black pepper, and cayenne pepper to create a dry rub.
  • Generously apply the dry rub to both sides of the ribs, ensuring they are well-coated.
  • Place the ribs on a baking tray lined with aluminum foil, meaty side up. Cover the tray tightly with another layer of foil to lock in moisture.
  • Bake in the preheated oven for 2.5 hours. If using a grill, place the wrapped ribs on the cooler side and close the lid.
  • After 2.5 hours, carefully remove the foil (be cautious of steam) and brush a generous amount of BBQ sauce over the ribs.
  • Return the ribs to the oven (uncovered) for another 30 minutes to allow the sauce to caramelize. If grilling, place the ribs over direct heat and cook for an additional 15-20 minutes, basting with more BBQ sauce frequently.
  • Check the internal temperature of the ribs with a meat thermometer; they should reach about 190°F for optimal tenderness.
  • Once done, remove the ribs from the oven or grill and let them rest for about 10 minutes before cutting.
  • Slice the ribs between the bones, serve hot with extra BBQ sauce on the side, and enjoy!

Notes

Serve with classic sides such as coleslaw, cornbread, or baked beans for a traditional soul food experience. Leftover ribs can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results.
