Start by slicing your beef thinly against the grain. This helps break down tough fibers and makes each bite silky.
In a bowl, mix the beef with baking soda, cornstarch, 1 teaspoon neutral oil, 1 teaspoon oyster sauce, and 1 tablespoon water. Let it marinate for 20 minutes while you prep other stuff.
Heat a wok or skillet on high with a little oil till it’s smoking hot but not burning.
Add the marinated beef, stir-frying it quick till it’s almost cooked but still tender. Remove it from the wok and set aside.
Add a bit more oil if you need, then toss in the chopped onions. Cook for 1-2 minutes till they soften but still crunch a bit.
Put the beef back in the wok, then pour 1 tablespoon light soy sauce and 1 teaspoon salted soy sauce over it. Stir well to coat everything nicely.
Sauté the beef and onions together for 1-2 minutes more till beef’s fully cooked and onions just tender enough.
Serve right away hot with some plain white rice. Watch that valve hiss while you wait, slow release or quick release works but natural release is best for deeper flavor.

Cool leftovers quickly and refrigerate up to 3 days. Reheat with a splash of water. Great for leftover fried rice or sandwich filling.
