  • 500 g all-purpose flour
  • 60 g sugar
  • 10 g active dry yeast
  • ½ teaspoon salt
  • 2 eggs
  • 200 ml warm milk
  • 100 g unsalted butter softened
  • 1 teaspoon vanilla extract
  • 300 ml whole milk for crème vanille
  • 3 egg yolks for crème vanille

  • Mix flour, sugar, yeast, and salt in a large bowl.
  • In a separate bowl, combine warm milk, eggs, and vanilla, then add to dry mix.
  • Knead the mixture into a dough until smooth.
  • Gradually knead in softened butter until dough is elastic.
  • Cover the dough and let it rise until doubled in size.
  • Heat milk and vanilla until steaming for the crème vanille.
  • Whisk egg yolks, sugar, cornstarch, and a little milk in a separate bowl.
  • Slowly mix hot milk into egg yolk mixture and return to low heat to thicken.
  • Stir constantly while heating until crème vanille is thick and silky.
  • Roll the dough out and evenly spread crème vanille over it.
  • Roll the dough tightly into a log and slice into 2-inch pieces.
  • Arrange slices in a greased baking dish.
  • Cover and let rise again for 30 minutes.
  • Preheat oven to 180°C (350°F).
  • Bake 20–25 minutes until golden brown.
  • Let rolls cool slightly before serving.

Notes

Make crème vanille ahead to save time. You can freeze unbaked rolls or double the batch for later. Enjoy warm with coffee or tea.
