Ingredients
  

  • 2 tablespoons butter
  • 1 medium onion, chopped (about 1 cup)
  • 2 cloves garlic, minced
  • 4 cups broccoli florets (about 1 pound)
  • 3 cups vegetable or chicken broth
  • 1 cup milk
  • 2 cups shredded cheddar cheese (about 8 ounces)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional, for heat)
  • 2 tablespoons all-purpose flour (optional, for thicker soup)

Instructions
 

  • In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until soft, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Add the broccoli florets to the pot and stir to combine. Pour in the vegetable or chicken broth and bring to a boil. Reduce heat and simmer for about 10-15 minutes, until the broccoli is tender.
  • If you prefer a smoother soup, use a blender to puree the soup until desired consistency is achieved; alternatively, you can leave it chunky for more texture.
  • Return the blended or chunky soup to the pot. Stir in the milk and season with salt, black pepper, and cayenne pepper if using.
  • Gradually add the shredded cheddar cheese, stirring continuously until the cheese is fully melted and incorporated into the soup.
  • If you desire a thicker soup, mix the flour with a bit of cold milk to create a slurry, then stir it into the soup and cook for a few more minutes.
  • Taste the soup and adjust seasoning if necessary before serving hot.

Notes

Pair this soup with crusty bread or a simple salad for a complete meal.
You can customize the cheese used; a combination of cheddar and Gruyère or Monterey Jack works wonderfully as well.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave.
