Ingredients
  

  • 1 medium ripe pineapple About 3-4 pounds.
  • ¼ cup brown sugar
  • 1 tablespoon melted butter
  • ½ teaspoon ground cinnamon
  • 1 pinch salt
  • to taste none fresh mint leaves Optional for garnish.

Instructions
 

  • Cut off the top and bottom of the pineapple, then carefully slice off the outer skin. Remove any remaining eyes, then cut the pineapple into 1-inch thick rings or slices.
  • In a small bowl, combine the brown sugar, melted butter, ground cinnamon, and a pinch of salt. Stir until you have a smooth paste.
  • Preheat the grill or grill pan over medium-high temperature.
  • Use a basting brush to coat both sides of each pineapple slice with the brown sugar mixture.
  • Place the pineapple slices on the grill. Grill for about 3-4 minutes on each side, or until grill marks appear and the sugar begins to caramelize.
  • Remove the grilled pineapple from the grill and let it cool for a minute. Garnish with fresh mint leaves if desired. Serve warm.
  • For an extra kick, consider adding a splash of rum to the brown sugar mixture before grilling.
  • Store any leftover grilled pineapple in the refrigerator for up to 2 days.
