- 2 medium ripe tomatoes About 1 lb total.
- 1 ball burrata cheese 8 oz.
- 1 cup fresh basil leaves
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- to taste none salt
- to taste none black pepper
In a small saucepan, combine the balsamic vinegar and honey. Bring to a gentle simmer over medium heat and let it reduce for about 5 minutes, or until it thickens slightly.
While the balsamic is reducing, wash the tomatoes and slice them into thick rounds. Arrange the tomato slices on a serving platter, overlapping slightly.
Open the burrata cheese and gently place it in the center of the tomato slices. If the burrata is large, slice it into two or three pieces to share.
