This creamy and flavorful Indian-style butter chicken features butternut squash for a lightened-up twist, marinated chicken tenders for tenderness, and warm spices layered into a velvety sauce – all made conveniently in the pressure cooker.
In a bowl, whisk yogurt, lemon juice, ginger, garlic, spices, and salt. Add the chicken to coat. Cover and refrigerate for at least 30 minutes or overnight.
Heat ghee in a sauté pan over medium-high heat. Remove chicken from marinade and cook in the pan for about 3 minutes. Transfer to a plate.
Make the sauce: Heat ghee in the same pan over medium heat. Add onions, garlic, and ginger and cook until onions soften, about 5 minutes.
Stir in spice powders, diced butternut squash, crushed tomatoes, and water. Simmer for 10 minutes or until squash is tender.
Blend the sauce until smooth using a blender. Return sauce to pan.
Add partially cooked chicken to the sauce and stir in cream, sugar, salt, and cayenne.
