Ingredients
  

  • 4 medium potatoes Peeled and diced, about 800g.
  • ½ head green cabbage Sliced, about 500g.
  • 1 medium onion Chopped, about 150g.
  • 3 tablespoons olive oil
  • 2 cloves garlic Minced.
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika Optional.
  • 1 cup vegetable broth or water

Instructions
 

  • Prepare all ingredients: Peel and dice the potatoes, slice the cabbage, chop the onion, and mince the garlic.
  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent.
  • Add the minced garlic and sauté for an additional 1 minute until fragrant.
  • Stir in the sliced cabbage, diced potatoes, salt, black pepper, and smoked paprika (if using). Mix well to combine.
  • Pour in the vegetable broth or water, making sure the vegetables are mostly covered.
  • Bring the mixture to a gentle boil, then reduce the heat to low, cover the pot, and simmer for about 25 minutes or until the potatoes and cabbage are tender.
  • Remove from heat and let it sit for a few minutes. Stir well before serving.

Notes

Feel free to add other seasonings such as cumin or herbs for a different flavor profile.
For a heartier dish, you can add cooked sausage or shredded chicken.
This dish can be served warm or at room temperature, making it versatile for any meal.
Leftovers can be stored in the refrigerator for up to 3 days.
