Heat the vegetable oil in a large skillet over medium heat. Add the diced green bell pepper, onion, and garlic. Sauté for about 5 minutes until the vegetables are tender.
Add the ground chicken to the skillet. Cook while breaking it apart with a spatula until it’s no longer pink, about 5-7 minutes.
Stir in the tomato sauce, Worcestershire sauce, Cajun seasoning, smoked paprika, salt, and black pepper. Mix well.
Reduce the heat to low and let the mixture simmer for about 10 minutes, stirring occasionally, until the sauce thickens slightly.
While the mixture is simmering, toast the hamburger buns in a toaster or on a separate pan until golden brown.
Once the chicken mixture is done, spoon it generously onto the toasted buns. Add sliced pickles if desired.
Serve immediately while hot.
