  • ½ cup packed brown sugar
  • ¾ cup cold butter cubed (about 12 tablespoons)
  • 16 oz cream cheese softened (two 8-oz packages)
  • ½ cup sugar
  • 2 tablespoon sugar
  • 1 teaspoon vanilla extract
  • 2 eggs lightly beaten
  • 3 medium tart apples peeled and finely chopped
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¾ cup flour for streusel
  • ¾ cup packed brown sugar for streusel
  • ½ cup quick-cooking oats
  • cup butter cubed, 5 ⅓ tablespoons
  • cup caramel syrup for drizzle

  • Preheat oven to 350°F. In a small bowl, combine 2 cups of flour and ½ cup brown sugar; cut in ¾ cup cold butter until crumbly. Press into a greased 9x13 inch baking dish and bake for 15 minutes until lightly browned.
  • While the crust bakes, beat cream cheese with ½ cup sugar and vanilla until smooth. Add the eggs and mix until just combined. Spread over the warm crust.
  • Toss apples with 2 tablespoons of sugar, cinnamon, and nutmeg. Spoon evenly on top of cream cheese layer.
  • In another bowl, mix ¾ cup flour, ¾ cup brown sugar, and oats; cut in ⅓ cup butter until crumbly. Sprinkle over apple layer.
  • Bake for 25 to 30 minutes or until the filling is set. Let cool fully in the pan on a wire rack for 1 hour.
  • Drizzle with caramel syrup before serving. Refrigerate at least 2 hours before cutting into bars.

Notes

Store bars tightly covered in the fridge for up to 4 days. For clean stacking, skip caramel drizzle until serving time.
