In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.
Drizzle the reduced apple cider into the cream mix, folding gently until incorporated.
In a shallow dish, combine the cooled brewed coffee with 2 tablespoons of caramel sauce. Dip each ladyfinger quickly into the coffee mixture, ensuring they are soaked but not soggy.
In the bottom of the baking dish, layer half of the soaked ladyfingers.
Spread half of the apple cider cream mixture over the ladyfingers, smoothing with a spatula.
Repeat the layers: another half of the soaked ladyfingers followed by the remaining apple cider cream mixture.
Cover with plastic wrap and refrigerate for at least 4 hours, or overnight for the best flavor and texture.
Before serving, drizzle with extra caramel sauce and dust with additional ground cinnamon.
