  • 2 pounds skirt steak trimmed of all excess fat
  • 1 jalapeño seeded and minced
  • 4 cloves garlic minced
  • 0.5 cup fresh cilantro leaves chopped
  • 1 orange juice of
  • 1 lime juice of
  • 1 lemon juice of
  • 2 tablespoons apple cider vinegar
  • 0.33 cup olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 0.25 teaspoon freshly ground black pepper

  • Whisk jalapeño, garlic, cilantro, citrus juices, vinegar, oil, and cumin in a bowl to make marinade.
  • Pour marinade over skirt steak in a sealed container or bag and refrigerate 2 hours or overnight.
  • Remove steak from marinade and pat dry, discarding used marinade.
  • Use pressure cooker’s sear mode to quickly brown steak on both sides.
  • Add steak to pressure cooker with splash of broth or water.
  • Cook on high pressure for 15 minutes, then naturally release for 10 minutes.
  • Open lid, slice thin against the grain, and serve immediately.

Notes

Use leftovers for tacos, burritos, or salads. Sear steak quickly for extra flavor depth before pressure cooking.
