  • 16 oz Mascarpone cheese chilled for best texture
  • 1 teaspoon Pure Vanilla Extract
  • 0.5 teaspoon Cinnamon adds warmth
  • 1.5 cup Sugar for sweetening cream
  • Pinch Salt balances out flavor
  • 1.5 cups Water for coffee soak
  • 3 tablespoons Instant coffee mixed with water
  • 2-3 tablespoons Unsweetened cocoa powder to dust on top
  • 0.5 teaspoon Cinnamon optional, for dusting

  • Mix instant coffee and water in a bowl until dissolved. Let cool to room temperature.
  • In a large bowl, beat chilled heavy cream with sugar until stiff peaks form.
  • In another bowl, whisk mascarpone cheese with cookie butter, vanilla, cinnamon, and salt until smooth.
  • Gently fold whipped cream into mascarpone mixture to keep the texture fluffy.
  • Dip Biscoff cookies quickly into coffee mix and layer in a 9x13 dish.
  • Spread half mascarpone mix over cookie layer evenly.
  • Repeat with a second layer of dipped cookies and remaining mascarpone cream.
  • Dust top with cocoa and optional cinnamon. Cover with plastic wrap.
  • Refrigerate at least 4 hours or overnight before serving.

Notes

Tastes best chilled overnight to let flavors meld. For a twist, try adding coffee liqueur to the soak.
