Preheat your oven to 350°F (175°C).
In a large skillet, brown the ground beef over medium heat. Add the diced onion and minced garlic, cooking until the onion is translucent, about 5-7 minutes. Drain excess grease if necessary.
Stir in the black beans, diced tomatoes, tomato sauce, chili powder, cumin, salt, and black pepper. Mix well and let it simmer for 10 minutes.
In a mixing bowl, combine 2 cups of the shredded cheddar cheese with the beef and bean mixture, stirring until incorporated.
Spread half of the crushed tortilla chips evenly in the bottom of your greased baking dish.
Pour half of the beef mixture over the tortilla chips, then sprinkle with another cup of shredded cheese. Repeat with the remaining tortilla chips and beef mixture. Finish by topping with the last cup of shredded cheese.
Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
Once done, remove from the oven and let it rest for 5-10 minutes before serving. Garnish with chopped cilantro, if desired.
