  • ½ cup butter melted
  • 4 cups rotisserie chicken shredded
  • 1 12-ounce bag frozen mixed vegetables
  • 1 11.36-ounce package Red Lobster Cheddar Bay Biscuit Mix
  • 2 cups whole milk
  • 1 10.5-ounce can cream of chicken soup
  • 2 cups low-sodium chicken broth
  • teaspoon black pepper
  • 2 teaspoon Better Than Bouillon Roasted Chicken Base
  • 2 tablespoon fresh chopped parsley optional

  • Preheat your oven to 350°F.
  • Pour melted butter into a 9x13-inch baking dish.
  • Layer shredded chicken evenly over the butter.
  • Top chicken with frozen mixed vegetables evenly.
  • In a medium bowl, whisk together biscuit mix and milk; pour over chicken and veggies. Do not stir.
  • Whisk together cream of chicken soup, broth, black pepper, and bouillon until smooth. Pour over biscuit mixture. Do not stir.
  • Bake uncovered for 45 to 50 minutes until golden and bubbly.
  • Remove from oven and let rest for 10 minutes before serving.
  • Optionally, garnish with chopped parsley before serving.

Notes

Let the casserole rest about 15 minutes. It will have a gravy consistency that thickens as it cools. Optional topping: add ½ cup shredded cheddar to biscuit mixture for extra cheese flavor.
