Cheeseburger Quesadillas

This quick and crispy cheeseburger quesadilla combines all the best parts of your favorite burger—beef, pickles, cheese, and special sauce—folded into a warm tortilla and cooked to golden perfection.

  • 1 lb Ground beef browned with salt and pepper then drained
  • Ketchup to taste, stirred into beef
  • Mustard to taste, stirred into beef
  • Large tortillas Mission gluten free optional
  • Shredded cheddar cheese for filling
  • Chopped onions for topping
  • Chopped pickles for topping
  • Chopped crispy bacon for topping
  • ½ cup Mayonnaise for burger sauce base
  • 2 tablespoons Ketchup for burger sauce
  • 2 tablespoons Minced dill pickles for burger sauce
  • 1 tablespoon Minced white onion for burger sauce
  • 2 teaspoons White vinegar for burger sauce

Instructions

  • Mix mayonnaise, ketchup, minced pickles, onion, and vinegar together to make the burger sauce. Set aside.
  • Cook ground beef in a skillet over medium heat with salt and pepper until browned. Drain fat, stir in ketchup and mustard.
  • Lay out a tortilla, sprinkle shredded cheddar on half. Add cooked beef, chopped onions, pickles, bacon, and drizzle burger sauce.
  • Fold tortilla over to enclose. Repeat with remaining tortillas and ingredients.
  • Heat skillet on medium. Cook each quesadilla 2–3 minutes per side until golden and cheese has melted.
  • Remove, slice into wedges, and serve with extra burger sauce.

Notes

Serve hot with extra burger sauce for dipping. Store leftovers wrapped tightly in foil in the fridge for 3-4 days or freeze and reheat on the skillet.
