- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 cups beef broth
- 2 cups diced potatoes
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 teaspoon dried Italian seasoning
- 1 teaspoon paprika
- to taste salt and pepper
- 1 cup heavy cream
- 1 ½ cups shredded cheddar cheese
- ¼ cup chopped fresh parsley for garnish
In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess grease, if necessary.
Add the diced onion and garlic to the pot and sauté until the onion is translucent, about 3-4 minutes.
Stir in the beef broth, potatoes, carrots, celery, Italian seasoning, paprika, salt, and pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for about 15-20 minutes, or until the vegetables are tender.
Stir in the heavy cream and cheese. Cook over low heat until the cheese is melted and the soup is heated through, about 5 minutes.
Adjust seasoning with additional salt and pepper, if needed.
Serve hot, garnished with fresh parsley.
You can substitute ground turkey or chicken for the beef for a lighter option.
Feel free to add other vegetables, like bell peppers or corn, for more variety.
This soup freezes well, so consider making a double batch for later enjoyment!
