  • 1 lb Beef round sliced thinly
  • 2 tablespoon Olive oil
  • 3 cloves Garlic minced
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 Red bell pepper diced
  • 1 Yellow onion diced
  • 4 oz Green chiles
  • 2 tablespoon Taco seasoning
  • 15 oz Tomato sauce
  • 1 teaspoon Beef bouillon
  • 4 cups Cooked white rice
  • 1 cup Cheddar cheese shredded
  • 1 bunch Cilantro chopped

  • In a large bowl, combine sliced beef with 1 tablespoon olive oil, salt, pepper, and garlic. Toss well and let sit for 15 minutes.
  • Heat remaining olive oil in oven-safe skillet over medium heat. Add bell pepper and onion, sauté about 5 minutes until softened.
  • Add marinated beef and taco seasoning. Cook about 5 minutes, stirring until beef is mostly cooked through.
  • Stir in green chiles and beef bouillon for extra flavor depth.
  • Remove skillet from heat. Stir in cooked rice and half of the chopped cilantro.
  • Cover skillet with lid or foil. Bake at 350°F for 20 minutes.
  • Remove lid and broil on high for 5 minutes to get cheese golden and bubbly.
  • Serve hot with remaining cilantro and optional toppings like sour cream or salsa.

Notes

This casserole is perfect for leftovers and gets even better the next day. Great for meal prep and freezer-friendly too!
