  • 1 measuring cups and spoons
  • 1 cutting board
  • 1 oven-safe baking dish if finishing in the oven

Ingredients
  

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 cup milk
  • 2 cups shredded cheddar cheese Adjust the cheese type to your preference; Monterey Jack or mozzarella can be used as alternatives.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • Optional fresh parsley for garnish

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
  • Add the minced garlic and diced chicken to the skillet. Season with paprika, salt, and black pepper. Cook the chicken for about 6-8 minutes until browned and cooked through.
  • Stir in the uncooked rice, chicken broth, and milk. Bring the mixture to a boil.
  • Reduce the heat to low and cover. Let it simmer for about 20 minutes or until the rice is tender and has absorbed most of the liquid.
  • Mix in 1.5 cups of shredded cheddar cheese until melted and well combined.
  • If desired, sprinkle the remaining cheese on top and broil in the oven for 3-5 minutes until golden and bubbly.
  • Garnish with fresh parsley before serving.

Notes

Feel free to add vegetables such as peas, carrots, or broccoli for added nutrition.
This dish can be made ahead of time and stored in the refrigerator for leftovers. Reheat in the microwave or on the stovetop.
