Ingredients
  

  • 1 lb ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 4 medium potatoes, diced (about 1.5 lbs or 680g)
  • 2 cups milk
  • 2 cups shredded cheddar cheese (8 oz or 225g)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika (optional)
  • 3 green onions, sliced for garnish

Instructions
 

  • In a large pot or Dutch oven over medium heat, add the ground beef. Cook until it is browned, breaking it apart with a wooden spoon. Drain excess fat if necessary.
  • Add the diced onion and minced garlic to the pot with the beef. Sauté until the onion is translucent, about 3-4 minutes.
  • Stir in the chicken broth and bring the mixture to a boil.
  • Once boiling, add the diced potatoes, salt, black pepper, and paprika (if using). Reduce heat and let it simmer for about 15 minutes or until the potatoes are tender.
  • Add the milk to the soup and stir well. Cook for an additional 5 minutes until heated through.
  • Gradually stir in the shredded cheddar cheese until melted and well combined.
  • Taste and adjust seasoning if necessary. If you prefer a thicker soup, you can mash some of the potatoes against the side of the pot.
  • Serve hot, garnished with sliced green onions.

Notes

For added flavor, you can incorporate Worcestershire sauce or a splash of hot sauce.
This soup can be stored in an airtight container in the refrigerator for up to 3 days.
You can freeze leftovers for up to 2 months; just reheat gently on the stovetop.
