Preheat the oven to 400°F and line a baking sheet with parchment paper to catch all those drips.
Cook the chopped bacon in a skillet on medium until crisp. Drain on paper towels to get rid of extra grease and let cool completely.
Unroll the puff pastry on a lightly floured surface and spread the cream cheese evenly all over it.
Sprinkle the chopped jalapenos evenly on top of the cream cheese, then scatter the cooked bacon and half each of the cheddar, Gruyere, and parmesan cheeses.
Fold the pastry sheet in half lengthwise, gently pressing the edges to seal.
Cut the folded pastry into ½-inch strips and twist each strip before placing on the baking sheet.
Brush each twist with the whisked egg and sprinkle the remaining cheeses over them.
Bake for about 20-25 minutes until puffed, golden brown, and crispy.
Let them cool slightly before serving.

Serve warm for best texture. To save time, use pre-cooked bacon, jarred jalapenos, and pre-grated cheese blend.
