  • 3 cups mashed potatoes chilled
  • 1 cup cheddar cheese shredded
  • 1 egg large
  • ¼ cup chives chopped
  • ¼ cup all-purpose flour
  • ½ teaspoon garlic powder
  • salt and pepper to taste
  • ½ cup Parmesan cheese grated
  • cooking spray or butter for greasing muffin pan

  • Preheat oven to 400°F (200°C) and grease the muffin pan with cooking spray or butter.
  • In a large bowl, mix mashed potatoes, cheddar cheese, egg, chives, flour, garlic powder, salt, and pepper until combined.
  • Use a scoop to fill muffin cups with the mixture. Press down slightly to pack.
  • Sprinkle Parmesan cheese on top of each puff.
  • Bake for 25–30 minutes until golden brown and crispy.
  • Let cool in pan for 5 minutes before removing. Serve warm.

Notes

Try adding paprika or cayenne for extra kick. Store leftovers in fridge or freezer and reheat for crispy texture.
