  • 1 lb smoked sausage sliced
  • 2 lbs baby potatoes quartered
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped green onions
  • salt and pepper to taste

  • Start by tossing quartered potatoes with olive oil, ranch seasoning, salt, and pepper. Get everything coated well for max flavor.
  • Put those seasoned potatoes in your pressure cooker. Layer the sliced smoked sausage right on top—don’t mix it all up just yet.
  • Check your sealing ring is in place so the cooker locks in all that flavor and moisture.
  • Add just a bit of water or broth if you like, but potatoes and sausage usually release enough moisture for cooking.
  • Close the lid and set to high pressure for about 8 minutes. Let it do a natural release for 5-7 minutes. Quick release any remaining pressure and open the lid carefully.
  • Transfer potatoes and sausage to a baking sheet, sprinkle shredded cheddar cheese on top, and pop it in the oven at 400°F for 5-7 minutes till cheese melts. Top with green onions and serve warm.

Notes

To reheat leftovers, add a splash of broth to keep moisture and microwave or warm in the oven to restore cheesy texture. For best freezing results, freeze before adding cheese and add fresh when reheating.
