Cheesy Ranch Potatoes and Smoked Sausage Easy Comfort Dinner
This hearty dish blends tender baby potatoes, smoky sausage, ranch seasoning, and ooey-gooey cheese into a rustic oven-roasted comfort meal topped with sour cream and green onions.
Toss quartered baby potatoes with olive oil, ranch seasoning, salt, and pepper in a large bowl to coat evenly.
Spread seasoned potatoes on a baking sheet and roast at 400°F for 20 minutes.
While potatoes roast, slice smoked sausage and set aside.
After 20 minutes, stir potatoes, then add sliced sausage and mix together.
Return to oven and bake an additional 10 minutes until potatoes are tender and sausage is heated through.
Sprinkle shredded cheddar cheese over everything and return to oven for 2–3 minutes until melted.
Remove from oven, spoon sour cream on top, and garnish with sliced green onions. Serve warm.
Notes
Store leftovers in an airtight container for up to 4 days in the fridge or freeze for longer. Reheat gently and consider adding a splash of water to prevent drying.
