  • 1 lb Smoked sausage sliced
  • 2 lb Baby potatoes quartered
  • 1 tablespoon Olive oil
  • 1 packet Ranch seasoning mix
  • 1 cup Cheddar cheese shredded
  • 0.25 cup Sour cream for serving
  • 2 Green onions sliced
  • to taste Salt and pepper

  • Toss quartered baby potatoes with olive oil, ranch seasoning, salt, and pepper in a large bowl to coat evenly.
  • Spread seasoned potatoes on a baking sheet and roast at 400°F for 20 minutes.
  • While potatoes roast, slice smoked sausage and set aside.
  • After 20 minutes, stir potatoes, then add sliced sausage and mix together.
  • Return to oven and bake an additional 10 minutes until potatoes are tender and sausage is heated through.
  • Sprinkle shredded cheddar cheese over everything and return to oven for 2–3 minutes until melted.
  • Remove from oven, spoon sour cream on top, and garnish with sliced green onions. Serve warm.

Notes

Store leftovers in an airtight container for up to 4 days in the fridge or freeze for longer. Reheat gently and consider adding a splash of water to prevent drying.
